Mary Mac's Tomato Pie

Hands on: 20 mins
Total Time: 55 mins
Serves: 12

2 TBL Olive Oil
2 medium sweet onions, thinly sliced
salt and freshly ground black pepper
1/2 (1-pound) box Ritz crackers
2 (28-ounce) cans diced tomatoes, undrained
2 Cups mayonnaise
1 1/2 cups grated extra sharp chedder cheese
1 cup grated parmesean cheese
3 TBL chopped fresh basil

Preheat oven to 350 degreees. Grease a 13-by-9-inch baking dish. In a large skillet, heat oil over medium heat. Add onions and cook, stirring occasionally until soft and translucent, 4 to 5 minutes. Add salt and pepper to taste, remove from heat and set aside.
In a food processor or by hand, crush 2 sleeves of crackers. Reserve 1/2 cup crumbs for topping. Place half the remaining crumbs in the bottom of the prepared baking dish. Pour 1 can diced tomatoes with their juice; layer half the onions on top. Repeat the layering of tomatoes and onions. Sprinkle with remaining half of the crumbs.
In a medium bowl, combine mayonnaise, chedder, parmesan and basil. Spread over the mixture in the baking dish, then sprinkle reserved 1/2 cup cracker crumbs on top. Place baking dish on rimmed baking sheet to catch any overflow and bake until golden brown, 30-40 minutes.
